Jicama and Cashew Citrus Salad


Spring is here. Let’s eat a little lighter by incorporating more salads in our diets. This light and refreshing salad will be a welcoming change from our typically heavy winter fare. Using one of my favorite sweet vegetables, this might become yours as well.

Anti-Cancer Effects Found in Citrus

We have had quite a flu-filled winter. Let’s continue to boost our immune systems with the vitamin C we find in citrus fruits. As an antioxidant, vitamin C decreases the stickiness that can occur on the fats that transport our sex hormones and stress hormones that flow though the blood vessels of the body. This can decrease the risk of heart disease. They also contain folate which is a b vitamin needed to prevent neural cord defects in babies. Even better, the flavonoid compounds found in citrus have anti-cancer effects. Flavonoids have been found to inhibit the growth of cancer cells and prevent the spread of tumors.

A Funny Looking Potato 

Jicama is a root vegetable originally from Mexico. It looks like a very round potato. Under it’s peel it is sweet and crunchy. Kind of like a hard and slightly less-sweet pear. Perfect for salads or just for snacking. I love putting lime juice and chili powder on it for a snack. High in vitamin C and fiber. It’s good for the immune system, cardiovascular system and the digestive tract.

Food For Your Gut Lining

Jicama also contains inulin. Inulin is a prebiotic fiber. That means it is fuel for the organisms in your gut that keep you healthy and helps keep the wall of the intestinal lining intact.

All this combined with leafy greens and some cashew protein make for a perfect springtime salad.
